Low Sodium Brisket

If you need a healthy meal, and you do love meat, but need to watch your sodium intake, and if you don't cook, give me a buzz and I'll work out something, call me for a consultation, what flavorings you like, and we can come up with a good flavorful meal for you. I can also introduce you to vegetarian and vegan cooking that you may love.

Recently done a low sodium braised brisket for someone, all I did was show up and season the brisket and gave him the instructions to finish it off in the oven. Although he said it was good, I don't know if he was totally honest and didn't shower salt on it. But if you do need a specially tailored diet, call me and we'll work together to get you eating good food again.

LAHAINA EVENING OFF THE MAIN DRAG




At the corner of Dickenson St. and Front Street, art is huge. The town of Lahaina where I'm from has lots of history, from the days of ancient Hawaiians (Kanaka Ma oli), to the Whalers and Missionaries, to the sugar and pineapple plantations, to the modern computer age, Lahaina still is a quaint little town, lots of water activities, food, and drink. This picture was taken on April 28, 2010 in the evening in the front yard of the Baldwin Home, just south of this area, the huge block wide Banayan Tree waits for a picture to be taken, also the  historic Pioneer Inn Hotel and Restaurant and Bar.

If you want a tatoo, local plates, jewelry, cute clothing for the women (wahine), this little area is your typical Lahaina style shopping area, geared for the tourist, you can call it cheesy, but if you are a mainlander always stressed out on life, stopping in here is a totally different feel, right across the street is Cheese Burgers In Paradise.

Shops are open till around 10 in the evening with more bars and restaurants open till midnight and past that on the weekends. Find something to take back home, Front Street is the place to go, this picture was taken right at the coner of Dickenson and Front Streets, (makai) or towards the ocean or sea, the camera shot is facing south, west is to the right where awesome sunsets are God made from late Spring to late Summer time. Lahaina is a casual spot, women dress easy, men and kids just the same, flip flops and no shoes is O Rite!

CHEF MARK ELLMAN

Chef Mark Ellman of Maui's Mala Ocean Tavern and Penne Pasta. Chef Mark does cook with organic produce and meats. As a professional chef and restaurant owner, when at home, he does cook from the heart. Always cook from the heart, home cooking is good cooking and can be healthier staying away from preservatives, and all that.

Teaching kids to cook is awsome, our sonny boy Scotty 8 years old and loves to hang out in the kitchen, he loves pizzas, tacos, and lots of fun foods, and he can eat! If kids love to work at it let them do it.

Call me and schedule a kids day of food and fun, we'll all learn together, and make some fun foods, breakfast, lunch meals that are safe and easy.

HEALTHY MEALS

Healthy meals at your home? Yes, big time yes, as a matter of fact, I'd rather do healthy cooking than regular cooking, this allows me to help make better a person's well being. What have I done to help someone? Well this one guy I helped had diabetes, and of course had to watch his sugar intake.

I made him a teriyaki beef meal, low in sat fats, low in sodium, and low in sugar.

I took a piece of bone in chuck steak, and trimmed the fat off, removed the bone and pounded it with a mallet, and what I did was soak it in some low sodium wheat free tamari soy sauce, some agave syrup, ginger, garlic, scallions, and some water, and a dash of herbs and some balsamic vinegar.

It tasted like regular teriyaki, but without all of the high bad for you contents.

Agave syrup doesn't raise the blood sugar a lot, the wheat free low sodium tamari soy sauce doesn't raise the sugar or blood pressure that  much, and the herbs are good for the health I use organics when possible.
