Let's all watch sexy hotty Italian chick chef Giada. :). Yeah I loved watching her cook on the Food Network. She trumped Rachel Ray as far as eye candy. Anyhow, let's watch her make some Italian food, in this video she makes Parmesan chicken tenders. Cool. 

Back to the Food Network, I don't like what I see nowadays. I kind of like the old school stuff, with Emeril going "Bamm!" that kind of stuff. All the shows are too much for me to handle. Whatever happened to the cook just cooking. Now it's all drama filled. I'd like to see a snobby chef get his ass kicked by an MMA fighter because the chef messed up the MMA fighter's food. :)

In this post we will learn how to make fried chicken. You may ask, why? Haven't you posted this before? Well yes. However this video is from a different cook. So thanks to You Tube, we can share endless information on cooking fried chicken. So kick back and releax. The good thing about this video is it's not boring. It cuts to the chase, and for those of you who get bored easily this type of production is for you. Everyone has their own style of doing things, and yes it's only fried chicken. But we can always learn something new.

CHICKEN & TOFU SOUP

In this post I'll do a healthy chicken and soup. Keep the sodium low, and sugars low it will be favorable for persons with hypertension or diabetes. Having a homemade soup that you have total control over the ingredients is key to healthy eating. It takes time to prepare, however most supermarkets presently offer pre-sliced, pre cut meats and veggies. Even broths and stocks are ready for you with all natural and organic available. Cost of food is expensive, I know that for a fact. And eating healthy may be costly. Here on Maui it is a prime time real estate location, meaning property taxes are high, which gets handed over to personal property owners, renters, as well as business offices etc..

Chicken still remains one of the most inexpensive meats available, if you are a wise shopper you may find the good chicken like all natural or organic on sale. Be aware of the market and prices, smart shoppers always win. However I understand sometimes you don't have the time to smart shop, and you must pay whatever price that's offered to eat.

INGREDIENTS Serves 4-6

3 lbs. of chicken thighs, bones off, skin off

14 oz. firm tofu cubed

32 fl. oz. of low sodium chicken broth

1/4 cup chopped garlic

1/4 cup chopped ginger

1 tsp. white pepper

1 tsp. soy sauce

1 tsp. sesame oil

1 tsp. oyster sauce

1 tsp. sugar

1 medium round onion sliced

1 medium bell pepper sliced

8 oz. white mushrooms sliced

1 cup chopped celery

8 oz. sliced cherry tomatoes

DIRECTIONS

In a large pot, add in the chicken pieces, then add in the garlic to the cherry tomatoes. Turn on the heat to medium high. Let the chicken and all of the other ingredients sweat out, let the steam create itself. This will release the flavors from the chicken, garlic, ginger, onion, bell pepper and the rest. Do this for about 10-13 minutes, stirring occasionally. 

Then add in the chicken broth, bring to a boil, then lower to simmer for about 20 minutes. Off the heat. Now pour soup into individual bowls, and divide tofu cubes. Now you have a simple heatlhy chicken & tofu soup.

The Ultimate Guide to Making Crispy, Amber-Hued Peking Duck at Home


Peking duck is one of my favorite dishes when I go to a Chinese restaurant. I'm not a great duck roaster, I tried but failed haha. Well you need the right tools, and it is somewhat time consuming. So let's learn together. The few times I tried to do it in a home kitchen came out either too pale or burnt and dried out. Put it this way, I'll go eat it, but forget making it. Haha. In this video, the chef breaks it down so that you can make Peking duck at home. Watch the steps, it is putting in your time from scratch, but it looks good. And the guy is not Chinese, but he does a good job.

Breadfruit-Handling and Preparation with Sam Choy

TATTOO TEQUILA REPOSADO


For those of you who are into tequila, on this post I'll showcase the Tattoo Tequila brand. I have the pleasure to work at Tamura's Fine Wine in Lahaina, Maui. There I work the poke' counter. Poke' is raw fish that's cubed and seasoned with various spices and sauces. However, it is one of the only liquor stores that sells top shelf products of wines and spirit. One night after my shift I took a walk around the store to observe the different brands of tequila. One that caught my eyes were the Tattoo brand. Can't miss it, with the black uniform look, and of course that menacing skull. 
According to sources Tattoo Tequila specializes in organic agave. It is a younger company, and seemingly on the rise. I posted a You Tube video for you to check out, and maybe after watching it you'll head to your local liquor and wine store to get a bottle. Check it out.








Man v. Food: Ultimate Cheesesteak Challenge


One of me favorite food shows was Man vs. Food with Adam Richmond. It was entertaining to see a man pig out on all kinds of comfort foods. Yeah I know you're saying things like, "Ron I thought you were devoting your blog to healthy cooking and eating?" True, but we all need some ridiculous entertainment once in a while eh? 

Adam visits this Philly cheesesteak joint, and devours 5 pounds of sandwich within 28 minutes! Did you hear me? 5 pounds! OK this isn't healthy, however, maybe watching this will keep you on course to eat and stay healthy. Hope you get a kick off of this video. I always did like watching Adam do his thing with eating. Nope you won't catch this old dude eating like a hog, but this is funny.
