Maui- Plates With Chicken

In the islands the locals have a dish called Huli Huli Chicken. Huli in Hawaiian means to turn over, or flip, Huli. If you ever have a chance to get Huli Huli Chicken, do so, it is really delicious because it is very simple to make. Chefs cut up chicken parts, like the legs, or the wings and  breast, and they marinate it in some concoction made up of soy sauce, Asian pepper hot sauce, black pepper, Hawaiian salt, some utilize different herbs or spices. Some sports clubs will make it with a simple Hawaiian salt, and fresh pepper rub, and seriously even that simple rub is awesome, imagine when chefs get really nuts with the flavorings?


Huli Huli Chicken is made over hot charcoal made from dried branches of Hawaiian Kiawe (Kee ah vay) trees, it is likened to the mesquite of the mainland. Huge grills are set up, and a platoon of cooks and helpers usual tend to the task of grilling the chicken parts. If you see a large gathering in a shopping center parking lot, or at the beach and you see lots of smoke, and when you smell it, your stomach tells you to pull over because your stomach needs a hit of that good smelling stuff, it's probably Huli Huli Chicken.


Get a plate, usually the cooks and helpers will put two scoops of rice and some greens for the side, or if they have a chest filled with ice, a delicious rich macaroni salad, or Korean style Kim Chi.
