Maui- Pupus (Appetizers)

Pupus or (Appetizers) is what we Mauians love to eat when drinking a cold one, watching a musical group, talking story or conversing, staying in the garage with the big screen on and watching the big game, little pieces of food that is simple and tastes awesome or pupus are supreme, the pinnacle of a small to large social get together.


My brother Cal, a retired postman is a fantastic pupu chef, he can whip up multiple plates of tasty food, once he gets going, you can't stop him. One time at his old residence, he and his friend Paul invited me to drink some beers with them, well, there were only five or six of us there, and Cal starts coming out with lots of food.


At one sitting, he had fried pork with onions, seasoned with salt, pepper, and splashes of vinegar. Then he had this marinated chicken thighs, hot off the grill, simply seasoned with soy sauce, sesame oil, garlic, ginger, scallions. Then the fried akule, or mackerel, with soy and hot sesame oil with lots of ginger. Then he had some really tender beef tenderloin from the grill. Then some chicken hekka. Then his version of a Filipino chicken soup, chicken malungay. So Asian is his influence, and if he had some financial backers, Cal would be sitting a lot prettier, possibly with a positive cash flow.


(Poo Poos) Pupus, are so popular, that almost any kind of influenced foods, can be utilized as just that, an appetizer. Italians have antipasti, Japanese have sushi and sashimi, pupus have become a foodie's dream. Go to a party, you'll find everything, crackers and expensive cheeses and spreads, breaded and deep fried trinkets, poached or steamed dumpings, sauteed meats cut thin for eating with a cold drink, veggies sliced thin with special organic dips, breads filled with tasty fillings, you name it and if you don't find it on the spread, it's sure to be made somewhere.


Most supermarkets have pupu platters on sale, it is usually sold when some holiday is rolling around the corner, or can be made by catering companies for your party. But if you want to impress locals at your party, have simple foods formed or sliced small for bite size munching. 


Look for Jean Watanabe Hee's paperback cookbook entitled: Hawaii's Best Pupu & Potluck retails for around $15.00 is a great addition to any foodie's library, filled with great ideas for you to utilize, again you don't need to follow every detail in any recipe you find in a cookbook, you can tweak it to your liking and experimentations, there's no laws on it you know?
