Shoyu Chicken Plates Are Popular; Get one While on Maui

When visiting Maui, or any of our wonderful islands, if you want to eat what we locals love to eat, then one of the plates you need to get is a Shoyu Chicken Plate, usually it is a plate with 2 scoops of rice, and a scoop of macaroni salad, but some places they'll offer you some corn, or steamed veggies.

What is Shoyu Chicken? Well, shoyu is soy sauce, most of you have had that already, and basically the sauce for shoyu chicken is like a teriyaki sauce. Some restaurants make it really sweet, some not so, and are more on the salty side, but nontheless, it is like teriyaki sort of.

The basic marinade for shoyu chicken, is soy sauce, garlic and ginger, maybe green onions, and sugar. The chicken parts are mostly thighs, in Hawaii thighs are us, ha ha. The chicken is soaked for an overnight session, then the chicken is put on a baking sheet and then baked to perfection.

Some places put it in a pot and boil it until soft, and the gravy is poured over the chicken and rice, my friend Shane used to pour the gravy over his rice and macaroni salad as well, making it sloppy. Another term for putting gravy all over everything, is sloppy.

Where can you get shoyu chicken on Maui?

In Lahaina Nagasako's Okazu Ya in the Lahaina Shopping Center is pretty good and really simple, not complicated, go early or else it'll be wiped out by workers that work in town.

Also Aloha Mixed Plate located on the ocean side of the Lahaina Cannery Mall has good baked shoyu chicken, and the location is nice, right next to the ocean.

The Pukalani Superette in Pukalani heading up the hill towards Haleakala crater, a small mom and pop market, usually the foods are prepacked and ready to grab and go. Make no mistake about this place, the food is exceptionally good local, simple and hits the spot. And you can get other stuff for the house too.

And most luaus have it.
