BEEF & PEPPERS can be of any influence depending on one's palate, so let's say you love Indian food, let's do a recipe for Beef & Peppers Indian Style, and this will be easy you all foodies!
Get a pound of flank steak and slice it thin across the grain.
Seasonings:
1 tbsp. chili powder
1 tsp. cumin
1 tsp. coriander
1 tsp. turmeric
1 tsp. sage
1/2 tsp. cinnamon
1 tsp. ginger powder
Salt and pepper to taste.
1 small red bell pepper cubed
1 small green bell pepper cubed
1 small round onion sliced thin
3/4 cup of organic coconut milk
1. In a mixing bowl mix all of the ingredients, then put the pieces of flank in there and rub all the pieces well, and let it rest in the bowl covered with foil for about 20 minutes at room temperature.
2. Heat up a stainless steel skillet with some oil for sauteeing, then fry the flank pieces until slightly browned, then remove from pan, set in a bowl.
3. Return skillet to burner with some oil, then heat up the bells and onions for a couple of minutes to make it slightly tender over medium high heat, return the cooked flank pieces to pan and work it into the peppers and onions.
4. Add in the coconut milk, and bring to a boil over high heat, then lower to a simmer for about 5 minutes, remove, then and salt and pepper to taste.
*Serve with jasmine rice or Naan bread, make it a real Indian style dish.
I make this with tofu for a vegetarian meal, but Indian foods on Maui works, make this and watch the sunset from your Lanai at your posh or not so posh condominium. Just make sure my friend James isn't lurking around, he'll whack that pan of food before you get a chance to even stick a serving spoon in there!
