Low Sodium Brisket

If you need a healthy meal, and you do love meat, but need to watch your sodium intake, and if you don't cook, give me a buzz and I'll work out something, call me for a consultation, what flavorings you like, and we can come up with a good flavorful meal for you. I can also introduce you to vegetarian and vegan cooking that you may love.

Recently done a low sodium braised brisket for someone, all I did was show up and season the brisket and gave him the instructions to finish it off in the oven. Although he said it was good, I don't know if he was totally honest and didn't shower salt on it. But if you do need a specially tailored diet, call me and we'll work together to get you eating good food again.

LAHAINA EVENING OFF THE MAIN DRAG




At the corner of Dickenson St. and Front Street, art is huge. The town of Lahaina where I'm from has lots of history, from the days of ancient Hawaiians (Kanaka Ma oli), to the Whalers and Missionaries, to the sugar and pineapple plantations, to the modern computer age, Lahaina still is a quaint little town, lots of water activities, food, and drink. This picture was taken on April 28, 2010 in the evening in the front yard of the Baldwin Home, just south of this area, the huge block wide Banayan Tree waits for a picture to be taken, also the  historic Pioneer Inn Hotel and Restaurant and Bar.

If you want a tatoo, local plates, jewelry, cute clothing for the women (wahine), this little area is your typical Lahaina style shopping area, geared for the tourist, you can call it cheesy, but if you are a mainlander always stressed out on life, stopping in here is a totally different feel, right across the street is Cheese Burgers In Paradise.

Shops are open till around 10 in the evening with more bars and restaurants open till midnight and past that on the weekends. Find something to take back home, Front Street is the place to go, this picture was taken right at the coner of Dickenson and Front Streets, (makai) or towards the ocean or sea, the camera shot is facing south, west is to the right where awesome sunsets are God made from late Spring to late Summer time. Lahaina is a casual spot, women dress easy, men and kids just the same, flip flops and no shoes is O Rite!

HEALTHY MEALS

Healthy meals at your home? Yes, big time yes, as a matter of fact, I'd rather do healthy cooking than regular cooking, this allows me to help make better a person's well being. What have I done to help someone? Well this one guy I helped had diabetes, and of course had to watch his sugar intake.

I made him a teriyaki beef meal, low in sat fats, low in sodium, and low in sugar.

I took a piece of bone in chuck steak, and trimmed the fat off, removed the bone and pounded it with a mallet, and what I did was soak it in some low sodium wheat free tamari soy sauce, some agave syrup, ginger, garlic, scallions, and some water, and a dash of herbs and some balsamic vinegar.

It tasted like regular teriyaki, but without all of the high bad for you contents.

Agave syrup doesn't raise the blood sugar a lot, the wheat free low sodium tamari soy sauce doesn't raise the sugar or blood pressure that  much, and the herbs are good for the health I use organics when possible.

TESTIMONIALS

I just want to say that Ron has something up his sleeves at all times, I used to be a chef, and now I'm an old man, but he knows how to cook and he is very simple, he doesn't get too crazy with lots of spices unless you want it. But recently I have been diagnosed with Diabetes, and he just knows how to satisfy the taste buds, he charges reasonably, and being an ex chef in my younger days, I understand what he has to go through to make a special meal for anyone. I'm telling you, he gets to the point, and he can pull of lots of ethnic dishes that I can't, I came from the old French school of cooking, I thought I knew it all,, but watching and talking to

My kids wanted hot dogs and burgers for a birthday party, Ron showed up and he told me what he was going to buy at the market, and of course it's all part of the cost, but he made some killer hamburgers that the kids just loved, and he went out of his way to purchase veggie burgers when I didn't ask for it, but he thinks ahead, and because there were several vegetarain kids? Ron is awesome, he is heads up man.

My friends and I wanted some sports bar food, so we called Ron, and he made us some buffalo wings, some potato skins, some oyster shooters, some battered fish, some teriyaki beef, and some Hawaiian style poke or raw fish cubes it was so good! Yeah, you get a chance to dine in and got the money to do it? Ron's your man, he's ours for sure, and I'm telling you, he's a lot of fun, you not only get a chef but a pretty funny guy to go with the food

Last year my daughter had a yeast infection, not funny, but the doctor said for her to stay away from yeast, I worked with Ron for almost 2 hours trying to find a good menu for my daughter that she would like. Ron went out of his way on his own time to look up recipes for people that can't intake yeast. He baked a yeast free bread, he made us a pasta with ingredients that did not contain any yeast, he even told us what kind of products that are made special for people that can't have yeast. WINE LESSONS

Hey we all want to learn the finer things about wine don't we? Of course we do, food and wine is an essential when you want to impress a date, or clients.

I can schedule a tour with some of the most respected wine experts in the area, I'll accompany you and we'll learn together on what is in in wines, and other liquors.

This is an all day excursion call ahead of time to schedule a very educational tour.

We will:

1. Meet a wine expert and learn about the different wines on the market, how to purchase, store and utilize the right wines. And also how to pronounce the names of wines so when you are trying to impress your date or client at a restaurant you'll sound like a seasoned pro!
2. We will have a meal at a very upscale restaurant, and have a dish with the right wine selection.
3. We will visit a local book store and look at books on wines.
4. Then we will have a look at cheeses and how wines work well with cheeses.

Believe me, everytime I go on one of these I learn something new all of the time

HOME SPORTS MENU

My favorite food is fun food where you can use ready made sauces or condiments and the sport fan doesn't really care, all he or she wants is something to get into the stomach so as to line it for more beers.

Hot Wings
Seasoned chicken wings, baked to a crisp and dipped in an all butter and hot spiced jacked up sauce, served with celery sticks and ranch (home made ranch)

Sesame Oyster Wings
Seasoned chicken wings, Asian style with oyster sauce, soy sauce, sugar, ginger, scallions, sesame oil and baked to a crisp, the marinade is added to the pan about 10 minutes before coming out of the oven

Fish & Chips
White fish strips, seasoned with salt and pepper, and dipped in a beer batter and deep fried to a crisp, served with crisp spiced up potato wedges

Oyster Shooters
Oysters in a shot glass, with vodka, lime juice, and cocktail sauce

Big Ass Chili Dog Plate
2- quarter pound franks, seared in a pan with butter and garlic, then placed inside a toasted bun, then smothered with a quick home made ground beef chili. Served with fresh cut fries

The Zook Dawg
quarter pound frank, boiled to perfection, topped with garlic butter and parsley, smothered in sauteed zucchinis, served wtih home cut fries

The Italian Big Dog
10 oz. Italain sausage, seared in butter and garlic, placed in a toasted bun, smothered with marinara sauce, sauteed onions, and chopped basil

Open Face Chorizo Sandz
10 oz. of fired up chorizo sausage, with onions, and mushrooms, wet, juicy and place on an open face hamburger bun, served with home cut fries

Breaded Scallops
Nicely golden fried scallops, served with a home made tartar sauce

Bacon Burger
A home mixed ground beef patty 1/2 lbs. before cooking, seared on a pan with butter! Topped with cripsy hickory smoked bacon, cheddar cheese, lettuce, tomatoes, onions, and home made mayonnaise!

Da Gravy Shroom Doom Burger
A home mixed ground beef patty 1/2 lbs. before cooking, seared on a pan with butter! Topped with sauteed mushrooms, topped after that with a home made dark brown gravy, a burger you need a spoon to eat it with, served with home cut fries

Onion Burger
A home mixed ground beef patty 1/2 lbs. before cooking, seared on a pan with butter! Topped with sweet round onions that was also sauteed in garlic butter, for onion and garlic and beef lovers, served with home cut fries

Bocca Veggie Burger
A vegetarian burger, sauteed in safflower oil, and topped with lettuce, onions, tomatoes, mustard and veggie mayonnaise. Zero saturated fats.

VEGAN MENU

Stuffed Peppers
Medium size bells, stuffed with a mixture of tofu, bread crumbs, mushrooms, onions, olives, cherry tomatoes, sour cream, vegan mayonnaise, organic herbs

Veggie Stir Fry
Meaty portobello mushrooms, beef tomatoes, sweet round onions, organic onions, cooked in safflower oil, wheat free tamari soy sauce, organic sesame oil, herbs and spices

Mock Chicken
Tofu pieces all organic, baked with canola oil to a crisp, then dipped in wheat free tamari soy, and dusted in a mixture of mock chicken powder and nutritional yeast, tossed with chopped veggies that is available

Mock Chicken Salad
Mock chicken with vegan mayonnaise, mixed together and moist, use for sandwiches, or top over greens

A tasty all natural veggie broth, cooked quick and tastful, topped with seasoned deep fried to a crisp tofu pieces

Tofu cooked in canola oil with a spicy and hot chilli oil, with hints of garlic and ginger

The average time is 3 hours max, you will be charged accordingly. For stews and braises, I do this to save you money.

1. I'll come over to your place and prep all of the ingredients, I'll set up the stove or oven for you and give you instructions to follow, then leave.

2. You do what I tell you and serve the meal.

3. If you own a slow cooker, I'll set it up and when it's done cooking, you serve and eat.

Tofu scramble is my famous dish that rocked the 2008 Haiku Vegan Holiday Fest on Maui, I take a block of tofu and break it apart, saute it in a pan with some safflower oil and garlic, add in chopped mushrooms, green onions, and then add in organic vegan sour cream, and organic Vegenaise TM, an organic vegan mayonnaise, with salt and pepper and turmeric to mimick the yellow orange of eggs, this has zero cholesterol, and is the Bomb healthy hearty breakfast.

We can work out what cereals you want, since it is really a personal dish, tell me what brands you prefer and if we can get we shall.

Roasted Kurobuta Pork Tenderloin
Tenderloin of Kurobuta Pork, a tasty juicy section of pork from Japan, marinated in an olive oil, garlic and herb concoction, simple is best. Coated with some herbs and roasted to perfection, this is a rather good portion, lovers can split this, or can save the rest for morning if you know what I mean. Pan is deglazed with red wine for your sauce, and served with sauteed zooks, and roasted herb potatoes.

Pan Seared Kobe Beef Rib Eye
Pan seared to your liking, a tender well marbled rib eye from Kobe, Japan. Served with a deglazed pan sauce with herbs and butter. Served with sauteed mushrooms, and rice pilaf


Baked Salmon
Baked salmon with fresh herbs, topped with a homemade mayonnaise with dill, served with garlic mashed potatoes

Seared duck foie gras with a port wine, veal stock, honey, and balsamic vinegar reduction, carmalized onions on a baguette

All tender (Kobe Beef) Chateau Briand, pan seared with a brandy and cream herb sauce, served with roasted herbed potatoes

IN HOME DINING

Welcome to my blog site, for IN HOME DINING, where I can come to your home, and cook and serve you a special dinner for two. I specialize in couples, or small families. I can do a gourmet dinner for two, complete with table settings, wine glasses, wine or champagne, soups, salads, appetizers, entrees, desserts.

How it works is you contact me via email or phone, and set up a free consultation. Maybe you want a special date, but don't want to drive because you want to drink. Well this works out perfectly. Choose from the menu that is posted. For special Lover's Gourmet Nights check out the menu.

I also have other services such as breakfast for families, no more than 10, I like to keep things on a small scale. I do kids parties, if you own a grill, I'll marinate some meat, chicken, hot dogs, burgers and grill them up.

You want meals prepped for the week? I'll do that too. For instance you have kids and want sandwiches prepped for the next two days, I'll come over and do that for you, wrapped and sealed for freshness.

Seniors? I took care of two elderly parents, and their diets are special, I'll do that too. If someone has a specific diet I can do that too, low sodium, low sugar, I'll work with you just give me a buzz or email.

Prices vary, it's all custom made. There will be shopping fees if applicable, prepping fees, set up fees, traveling fees, breakdown fees. The more I'm asked to do you will be charged accordingly, so call and find out if we can be a good fit for your special meal.
