This is healthy, with very little salt.
5 lbs. of frozen chicken thighs
4 cups of low sodium tomato sauce
1 cup of olive oil
1/4 cup of chopped oregano
1/2 cup of orange juice
1 onion minced
1 cup of garlic paste made from as much garlic cloves as needed, peel garlic and process in a food processor with some olive oil until a smooth paste is made.
Black pepper to taste
Salt to taste
Defrost the chicken, remove the bones and the skin, remove from bone.
Place all chicken pieces in a bowl, then add in the tomato sauce, olive oil, orgeno, orange juice, minced onion, massage the ingredients on to the chicken pieces. Let sit in fridge for about 2 hours covered.
Preheat oven to 375 deg. F
Remove chicken from fridge, let stand at room temperature for about 30 minutes.
Spread the garlic paste over the chicken, place on a greased baking sheet, and bake chicken for about 40-50 minutes or until cooked through.
