Maui Snacks Home Maid Bakery Manju

Visting Maui? You want to know what we snack on here? We pretty much snack on unhealthy shit, just like you guys on the mainland. But here is some stuff you want to snack on if on Maui, and you'll more than likely want to eat it again and again. I made friends with some people from the mainland, and the next thing you know they're buying these things by the boxes and shipping them out via the US Postal service, of course, it is too expensive to add on luggage to the flights these days, most of the airlines are fucking insane with gauging its passengers.

What to get?

Azuki Beans Manju from Home Maid Bakery. What is it? It is a sweetly blended adzuki beans, soft, melts in the mouth, and baked in a nice somewhat chewy yet flaky crust. Eat one with a cup of coffee, or snack on one watching t.v. or facebooking or tweeting.

What's the history of the manju? I'll have to do more research, but WTF, you'll on the computer right now, you google it, I ain't gettin paid for this shit. Ha ha. but seriously, a azuki bean manju hits da spot!

Tofu Recipe From Maui

Over the years, tofu has been a major part of healthy cooking, it has zero cholesterol, no saturated fats, it is filled with water, it has a neutral flavor so it makes it great for all kinds of seasonings, Asian, European, you name it, you just sub this for meats, and you can make something really healthy. Tofu was and still is a staple of Buddhist monks, and very much utilized in Indian cooking.

As a chef at Down To Earth Natural Foods in the early 2000s in Lahaina, we utilized tofu in most of our dishes, we made all kinds of dishes with tofu, and it was delivered to the shop in tons, and we'd go through it like crazy in one day. We ordered a firm tofu that was pressed down so it was so firm, a steak of sliced tofu could be tossed around without it being broken in half.

Well there's a lot of people asking me about tofu dynamite, it is really easy to make and here is some of the ingredients you'll need.

10 oz. of firm tofu, broken into chunks
2-3 cups of Vegenaise it is a vegan mayonnaise zero cholestrol and no sat. fats
8 oz. sliced mushrooms
1 cup of sliced onions
1/4 cup of minced scallions
1 tbsp. of garlic powder
1 1/4 cups of tamari soy sauce
1 tbsp. of vinegar
1 tsp. of coriander
1 tsp. of salt
1 tsp. of pepper

1. Preheat your oven to 375 deg. F.
2. Lightly grease a 9x9 cake baking dish
3. In a mixing bowl, mix all of the ingredeints together one by one
4. Place the tofu mixture into the pan and bake it for about 30 minutes or until a nice brown crust is formed, remove and serve as a side dish or eat it with rice.

* Dynamite is usually sold at sushi bars.

Vegenaise is a vegan mayonnaise and is the base for the tofu dynamite, it is more expensive than real mayonnaise made from eggs, but is a good alternative if you have diabetes and hypertension.

Bulgar A Grain That Heals

What is bulgar? It is a cracked wheat grain, it is dense in digestion-enhancers, filled with fiber, that keeps blood cholesterol low, is a great source for vitamins B1, B2, B3; copper, iron, magnesium, phosphorous, protein, and fibers like I mentioned. B vitamins are great for energy as well as keeping the cells clear of any bad inhabitants that enters the blood stream and tissues, also to maintain the nervous system.

Bulgar is not a good grain if you or anyone suffers from wheat or gluten allergies.

To cook bulgar it is simple, for 1 cup of bulgar, place it in a bowl, and add in about 1/2 to 3/4 cups of boiling hot water, and let it sit for about 30 minutes. It'll soften, and you can add this to veggies that are stir fried, and season  with your favorite seasonings.

Mochiko Chicken No. 1 BBQ Lahaina

I sampled a Mochiko Chicken plate lunch at No. 1 BBQ located at the Lahaina Square Shopping Center, across the Ace Hardware, right off of Wainee St. By the way the street is pronounced (Why- neh- eh) not (Why nee) or you could call it that, for you visitors coming here. The business has been around for about 2 years, and the food is decent. This plate the Mochiko Chicken was enough for 2 people. It came with the standard 2 scoops of sticky rice, 1 scoop of macaroni salad, and about 3/4 of a pound of seasoned Mochiko Chicken. It was seasoned in soy sauce and a sweetener, and floured with mochiko flour or rice flour and deep fried. For 6.95 as a special, this could do no go wrong.

There's other stuff on the menu there, saimin with Spam, breakfast eggs, beef, pork and veggie dishes, so if you like Asian with the Korean influencials, No. 1 BBQ is a pretty good place to eat, it is a counter type op, and the seating is shared for peeps eating at Ilocandia, Zushi, and Maui Tacos. I would suggest this plate for sure, if you are a foodie, destined for Maui for the first time, this is a good place, and you can come as you are it is very casual, slippers, shorts, tanks, it's all good to go, No. 1 BBQ should be a local stop if in Lahaina.
