If you've never had Chinese Style Ginger Chicken it is served cold generally speaking. Is it cooked? Yes it's cooked and chilled and served cold making it a great dish on a warm or hot summer day.
Usually chefs will boil a whole chicken in some salt water with ginger. Cook it all the way through. Then chill it. Then they'll get some olive oil or other oil, and blend it with fresh ginger and maybe some green onions creating a nice ginger dip. Some chefs will make a lot of this ginger paste and cover the pieces of chicken for display. Usually the bird is sliced in half and then sliced into pieces. Here are some pics from Google Images.
