SIMPLE SOUP FOR THE BUSY FAMILY

Simple Chicken Soup with Fettuccine is EZ!


If you live in some civilized suburb in America there's a good chance you live a few blocks away from a local grocery store or chain supermarket. Yay! Now if you love to cook your own foods, but time is a factor, then you can make a simple chicken with fettuccine soup. And I'll tell you how to do this.

INGREDIENTS

7 oz fettuccine cooked al dente and set aside
1 Carton or a few cans of low sodium chicken broth.
1 tbsp vegetable or canola oil
1/2 round onion diced
2 cloves of garlic smashed
1 medium tomato, sliced into small cubes
1 celery stalk with tops, rough chopped
1 pound of pre cooked chicken parts (roasted chicken white meat, left over from a bbq).
Salt and pepper to taste

DIRECTIONS

1. Heat up oil in a small stock pot large enough for the amount of broth you'll be using. Sautee the onion, garlic, and tomato for a a couple of minutes so the aroma comes out.

2. Add in the chicken broth, and bring to a boil, then lower to a simmer.

3. Add in the chicken, and heat through for about 3-5 minutes. Then add in the celery parts and off the heat.  Then add in the cooked fettuccine noodles and heat through. Season with salt and pepper.

Serve in individual bowls, with dinner rolls or crackers. Divide the chicken and noodles accordingly, enjoy.
