PORK STEW THAI

Keeping things simple, in one pot, with a Thai twist, life can be good. Working all day? You can make this in a slow cooker so that it is timed just right, when you get home, it's time to grrrrrrine!


Here's the ingredients:

2 lbs. of pork shoulder cut into 1" cubes
1 tsp. salt
1 tsp. pepper
2 large tomatoes cut into quarters
2 large carrots peeled and cut into quarters
2 large potatoes cut into quarters
8 oz. can of low sodium tomato sauce
1/2 cup Sriracha
1 tbsp. red chili flakes
2 tbsp. fish sauce
1 inch ginger root smashed
1 tbsp. sugar

Simple! Place everything in a pot, over medium high heat, and cover, once it starts to simmer, lower heat and cook for 2 hours. Serve with hot rice.

Note: If using a slow cooker, set timer so that it will end cooking about an hour before you get home from work. All the veggies should just melt down, but that's okay, the pork may be so soft it will be shredded, but that's okay too, everything will come into concert and it will rock your dinner!
