Do you love eggs as much as I do? I can eat eggs everyday, now if that's good for me health wise? I don't think so. However here's a breakfast dish that's simple to make, it's like a one pot dish for breakfast.
INDREDIENTS
Non stick cooking spray (Buttery flavor is good)
1 cup of fresh broccoli florets
3/4 cup cooked chicken meat, white is preferred (I like meat from the legs)
1/3 cup chopped tomato (or quartered cherry tomatoes)
1/4 cup chopped onions (Sweet Maui onions rock)
1 tbsp minced chives (Or green onions)
1 tsp. garlic powder (Or a mixture of Italian herbs)
1/2 tsp. sea salt
1 1/2 cups of Egg Beaters Original or 12 oz. (or same amount of egg whites)

DIRECTIONS
- Preheat broiler, and spray medium cast iron skillet with cooking spray. Heat over medium heat. Add broccoli, chicken, tomato, onion, chives, garlic powder, and salt. Cook and stir 3 minutes or until broccoli is crisp-tender.
- Add Egg Beaters or egg whites, and lower heat to low and cover with a lid. Cook 8-9 minutes or until frittata is almost set before removing the lid.
- Place skillet under broiler 2 minutes or until top is set, but not brown. Cut frittata in half to serve.
Serve with toasted all grain bread, or hash browns.
Note: Step 1-2 is cooking on your stove top, the broiler part is to set the top of the frittata, some people like theirs browned or crusted a bit.
