TOFU BURRITOS

Hi foodies, hope you are all doing fine. We continue to cook and eat as healthy as we can. Low in sodium, and low in sugars. Hypertension, and diabetes is something we don't want. And eating right can help. So in this post, let's do a simple tofu burrito. 

All you will need is some very simple ingredients. Right from the start, we are not going to use any salt. Instead we are going to use Spike. We will use black pepper, and some other seasonings. Also, we will not use any kinds of bottled sauces. How's that? Sounds interesting already? Yeah none of that. We are totally going to attempt to not use any kinds of bottled or refined stuff.

INGREDIENTS serves 2-4

1 tbsp. safflower oil

1 block of firm organic tofu, crumbled

1 tsp. garlic powder

1 tsp. onion powder

2 tbsp. chili powder

1 tbsp. cayenne pepper

3/4 cup of water

------------------------------------

1 small round onion chopped

1/2 a medium bell pepper chopped

1 small jalapeno pepper seeded and chopped

1 tsp black pepper

Spike to taste

4 medium size corn tortillas, warmed.

DIRECTIONS

In a 10" non-stick pan, over medium high heat, add the oil, then begin to cook the tofu. You may need to add a little bit more oil, that's OK. Add in the other ingredeints but not the water. Stir the seasonings through. Then add the water. Cook and heat through well enough, about 7-9 minutes. 

Add in the onions, bell peppers, jalapeno peppers, stir and heat through about 3 minutes. Season with black pepper and Spike. Place tofu filling in center of corn tortilla, and fold. Serve with black beans, refried beans, or brown rice.


Try this out, if you need salt, well try to just use a little. And if you need to use some bottled sauce that has sodium or sugars, again, use it sparingly. 2019 my foodies is brand new. Let's change our lives. Promote good health, good vibes, be understanding. That's all we can do.
