On today's blog post, I will give to you a simple recipe. Well, the first part will take a while, but the stir fry part will be ______ing fast! It will be Eggplant w/ Beef Brisket Stir Fry. Yes mam, yes sir, I'll tell you what to do.
I'm a cook that likes to if I can, purchase large portions of beef and slice it up myself into steaks, or sub-portions. For instance, the beef brisket. If you are going to smoke a brisket, or braise a brisket that is great, perfect. You see, what I'm getting at is Left Overs Cooking. As a matter of fact, you don't need to go and cook the brisket yourself. You see the brisket is a pretty tough portion of beef, coming from the front of the cattle, the method of cooking is slow cooking, smoking it in a BBQ, or braising it in some liquid in a dutch oven. Now, let's say you are going to do the brisket on your own. And you know how, great. We'll get into cooking brisket later on. So let's say you have leftover brisket of any cooking method, we are going to take that, and cut them into bitesize pieces, about 8 oz. worth, that will serve about 2 to 3 people, because we are going to be using some eggplant as well. Maybe you bought some BBQ brisket at the school bazaar, or someone gave you leftover braised beef brisket.
TOOLS NEEDED: Sharp knife or cleaver. To slice brisket and the eggplant(s) A Wok, or a skillet with some cooking oil.
INGREDIENTS
(Do this first)
1 long and skinny eggplant, skin peeled, and cut into 1/2" slices in a diagonal.
1/4 tsp. minced ginger
1/4 tsp. minced garlic
8oz. cooked beef brisket cut into bitesize pieces

Sauce:
1/4 cup soy sauce
1/4 water
1 tbsp. brown sugar
1 tsp. chili garlic paste
1 tbsp. oyster sauce
1/4 tsp. sesame oil
1 tsp. cornstarch

Directions for sauce:
In a mixing bowl, whisk all of the ingredients together and set aside.
Directions for stir frying the beef brisket and cooked eggplant
1. Heat up 1-2 tbsp. of vegetable oil in the wok until hot
2. Add in the ginger and garlic, stir in for a few seconds
3. Immediately add in the sliced cooked beef brisket, stir fry for about 2 minutes or shorter
4. Add in the cooked sliced eggplant, stir for about 30 seconds to 1 minute, then add in the sauce, stir fry until the sauce thickens slightly.
Remove wok from heat, and place the cooked items onto a serving platter, with a bowl of rice for 2 to 3 people to share.

Directions:
1. Heat up the oil in a wok until hot, add in the sliced eggplant, and fry until each piece has soften a little. Not too much because it will be taken out of the wok, and added in later with the beef brisket. Place all cooked eggplant pieces on a paper towel do drain the oil, set aside.

1.5 tbsp. vegetable oil1/4 tsp. minced ginger
1/4 tsp. minced garlic
8oz. cooked beef brisket cut into bitesize pieces

1 tsp. cornstarch
