SUSHI CHEF Scottee Nakamura is in my book and here is his Spicey Tuna Roll Mixture (8 rolls)
1 lb. Ahi Tuna
1 tbsp. Mayo
1 1/2 tbsp. Masago (Smelt roe)
1 1/2 tbsp. Sambal (Spicy hot sauce)
1 tsp. Sesame Oil
Green Onions minced
Mix it all up and roll!
