MAUI- Spare Ribs Recipe

Here's a spare ribs recipe:

Have your butcher cut the spare ribs into small sections, larger than bite-size pieces. Get about  5 lbs. worth, to feed like 6-8 peeps. What you do is first of all, get yourself a deep stainless steel roasting pan and set it aside.

Preheat your oven to 350 deg. f.

Other ingredients:
Salt and Pepper to your liking.
8 finger length red chilis deseeded and minced
10 garlic cloves smashed
6- 1 inch ginger peeled and chopped
1 small or medium ripened pineapple cubed
4 cups of soy sauce
1 cup of apple cider vinegar
2 cups of chopped green onions for garnish.

1. lay out the pieces of spare ribs on the pan
2. sprinkle salt and pepper all over the spare ribs
3. sprinkle the minced chilies over the spare ribs
4. sprinkle the garlic over the spare ribs and the ginger
5. In a bowl mix the pineapple, soy sauce, vinegar together, then pour it over the spareribs.
6. cover the pan wit foil, and roast it for about 2 hours

If you want to marinate the spare ribs for a few hours first it's all good, I prefer to have it not marinated because I feel that the long marinating time gets in the way of the pork's flavor.
