Tofu Recipe From Maui

Over the years, tofu has been a major part of healthy cooking, it has zero cholesterol, no saturated fats, it is filled with water, it has a neutral flavor so it makes it great for all kinds of seasonings, Asian, European, you name it, you just sub this for meats, and you can make something really healthy. Tofu was and still is a staple of Buddhist monks, and very much utilized in Indian cooking.

As a chef at Down To Earth Natural Foods in the early 2000s in Lahaina, we utilized tofu in most of our dishes, we made all kinds of dishes with tofu, and it was delivered to the shop in tons, and we'd go through it like crazy in one day. We ordered a firm tofu that was pressed down so it was so firm, a steak of sliced tofu could be tossed around without it being broken in half.

Well there's a lot of people asking me about tofu dynamite, it is really easy to make and here is some of the ingredients you'll need.

10 oz. of firm tofu, broken into chunks
2-3 cups of Vegenaise it is a vegan mayonnaise zero cholestrol and no sat. fats
8 oz. sliced mushrooms
1 cup of sliced onions
1/4 cup of minced scallions
1 tbsp. of garlic powder
1 1/4 cups of tamari soy sauce
1 tbsp. of vinegar
1 tsp. of coriander
1 tsp. of salt
1 tsp. of pepper

1. Preheat your oven to 375 deg. F.
2. Lightly grease a 9x9 cake baking dish
3. In a mixing bowl, mix all of the ingredeints together one by one
4. Place the tofu mixture into the pan and bake it for about 30 minutes or until a nice brown crust is formed, remove and serve as a side dish or eat it with rice.

* Dynamite is usually sold at sushi bars.

Vegenaise is a vegan mayonnaise and is the base for the tofu dynamite, it is more expensive than real mayonnaise made from eggs, but is a good alternative if you have diabetes and hypertension.
